We are a local restaurant in Calgary that specializes in traditional Japanese ramen. We offer ramen with two kinds of stock (paitan/pork or chintan/chicken) and our distinctive taste come from slow-cooking the stock for optimal flavor potential. We also offer a variety of appetizers, desserts, and alcoholic/non-alcoholic beverages to enlighten your senses!

Our story

Chef Dean began his cooking career in 1994 at Tomokazu, a Japanese restaurant in Hong Kong. At Tomokazu he met the executive chef Ricky Cheng, who later became his mentor. Ricky , now the Chairman at Taste of Japan Group, taught Dean the culture, style and tradiditon of preparing sushi in Japan’s top restaurants. Dean immersed himself in Japanese cuisine, demonstrating commitment, passion, and hard work that lay the foundation for his future successes. 

A couple years later in 1996, Dean took the knowledge and authentic experience he gained in Japan to Calgary, Alberta. At the age of 20 he began working in Calgary’s top sushi spot for 9 years as the head of sushi chef, where he employed his passion for the art of sushi. 

In 2005, an exciting opportunity arose for Dean to open his own sushi restaurant, Maruju Sushi. Since opening  the doors to Maruju  Sushi, Dean has kept his menu fresh and authentic, reflecting current flavor trends in Japanese cuisine. The specialty menu created by Dean is one of the most unique offerings to Calgary’s sushi scene that blends Japanese flavors with Dean’s personal recipes, creating some of the finest sushi flavors in Calgary.

Seven years later after an encounter with an enthused customer, Dean was convinced to partner his flavors and recipes and open a noodle bar. SInce Dean’s passion or food  never rests, and he is often found in his spare time making Ramen noodle bowls  for his friends, opening a noodle bar was a perfect fit. In 2015, Umami Noodle Bar  opened its doors, putting a modern twist on the Ramen noodle craze that has taken the food scene by storm. Since 2015, Dean and his creations at Umami have become known as the originators and innovators of Ramen culture in Calgary.

Every year Dean visits Asia with Ricky Cheng, his mentor and executive chef. During their visits they spend one month working in new Japanese restaurants in Hong Kong and across Japan, to learn new flavors and techniques. 

Chef Dean is always mastering his craft and returning to the source of Japanese cuisine and culture for  new innovation.  His scills and reputation are continually growing alongside his flavors and recipes.
